TURKEY NOODLE CASSEROLE
12 ounces egg noodles
1 Tbsp butter
3 Tbsp flour
3 ½ cups skim milk
1 (10 oz.) can condensed light cream of mushroom soup
½ cup diced red pepper
½ cup diced green pepper
¼ cup chopped onion
½ tsp black pepper
½ tsp garlic powder
1 cup shredded 2% Mexican blend cheese
3 cups chopped skinless cooked turkey breast
Preheat oven to 350 degrees. Cook egg noodles in boiling water until cooked through but slightly firm. Drain.
Melt butter in saucepan over medium heat. Add flour, stirring until golden. Slowly add milk to butter/flour mixture to make a white sauce, stirring constantly. Stir in soup, chopped peppers, onions , black pepper and garlic powder. Bring mixture to a boil and simmer for 2 minutes. Remove from heat. Stir in cheese until melted. Add this mixture to turkey and noodles in a large bowl and stir well. Pour into a large casserole dish. Bake until heated through-about 30 minutes.
